Backstrap Jerky

  • 1 bottle Moore's Original Marinade
  • 1 cup brown sugar
  • garlic salt to taste
  • coarse black pepper to taste
  • 1 backstrap
  • 1 tsp paprika
  • onion salt to taste


  1. Cut backstraps with the grain in strips 5" long, 1" wide and ½" thick.
  2. Mix Moore's Original Marinade, brown sugar, paprika and sprinkle with garlic salt and onion salt to taste.
  3. Marinade strips in this mixture for at least 30 minutes.
  4. Remove strips and save marinade.
  5. Sprinkle strips with coarse black pepper to taste.
  6. Pour marinade into pan in smoker.
  7. Allow coals to burn down and drape strips over racks in smoker for 8 hours.
