Potato and Chicken Casserole

1 lb boneless chicken tenderloins, cut into cubes
6-8 medium potatoes, cut into cubes WITH skin on
1/3 cup vegetable oil, or preferred cooking oil
1/2 teaspoon pepper
1 teaspoon salt
1 tablespoon paprika
1 tablespoons garlic powder
6-7 tablespoons Moore's Creamy Ranch Buffalo Wing Sauce
2-3 cups fiesta blend shredded cheese
1 package of real bacon pieces
1/2 cup dried green onion


1. Preheat oven to 500 degrees.
2. Spray a 9" x 13" baking dish with vegetable oil
3. In a large bowl, mix together the vegetable oil, pepper, salt, paprika, garlic powder and wing sauce.
4. Add the cubed potatoes to the bowl and stir to coat.
5. Place the potatoes into the baking dish and bake for 50-55 minutes, stirring every 15 minutes.
6. Cut up chicken and place in the bowl with the remaining sauce mixutre. Stir to coat, place in fridge.
7. When 15 minutes left, cook check to mostly done. You will finish cooking in the overn.
8. Set oven to 400 degrees.
9. Place chicken in the baking dish with potatoes.
10. Mix togeher the cheese, onion and bacon bits. Sprinkle on top of casserole.
11. Bake for additional 15 minutes. Enjoy!
