How to Make a Perfectly-Grilled Steak

How to Make a Perfectly-Grilled Steak
A perfectly-grilled steak is the ultimate achievement in the backyard grilling world. Unfortunately, it's an easy thing to mess up if you don't know what you're doing. Plus, from marinating methods to degrees of doneness, everyone has their own preferences when it comes to steak.
Fortunately, learning the basics of how to grill steak properly can be mastered with practice and a little guidance. Follow these 5 steps to a perfectly-grilled steak:
1. Choose the Right Cut: Again, this comes down to preference, but remember that the less expensive cuts often require longer marinating time to tenderize and flavorize. We recommend steaks that are at least one inch thick for optimal grilling results. Don't forget to add flavor with marinade!

2. Trim the Fat: Fat is actually a good thing when it comes to grilling steak. It provides marbling, which equals flavor and juiciness. But too much fat around the outside melts on the grill and can cause flare-ups and charred meat. There’s no need to remove all the excess, but don’t leave more than a thin layer.

3. Sear: While you’re preparing the steak, get your grill pre-heating. Once it’s hot, place the meat on the grill with tongs, not a fork, to avoid puncturing the steak and letting juices run out. Once it’s in place, don’t move it for 2-3 minutes. Flip only once halfway through cooking to sear on the other side.

4. Finish Cooking: If searing on high heat, the outside of the steak could be burned by the time the inside is done. After searing, turn the heat down or move to indirect heat and cover to finish cooking. Depending on how you like your steak, here’s a guide to temperatures for doneness:
  • Rare: 120-125°
  • Med-Rare: 130-135°
  • Medium: 140-145°
  • Medium-Well: 150-155°
  • Well Done: 160°+
5. Rest: Take your steaks off the grill when they’re done, but don’t dive in right away. Cover loosely with foil and let them rest for at least 5 minutes so the juices can redistribute.
