Cauliflower Rice Spring Rolls

Ingredients

  • Rice paper
  • 1 large sweet potato shredded
  • 1 cup red cabbage chopped or shred
  • 1 package frozen cauliflower or 1 head of fresh cauliflower
  • ¼ cup Moores Zesty Garden Herb Marinade

Instructions

  1. Separately, in a food processor shred sweet potato and red cabbage
  2. Cook frozen broccoli in microwave according to package
  3. Drain cooked cauliflower
  4. Place cooked cauliflower in food process
  5. Place 1 1/2 cups of "riced" cauliflower into a bowl and add 1/4 cup of marinade. Mix well.
  6. Fill a large bowl a couple inches high with warm water.
  7. Take a rice paper and place in warm water for ~ 5 seconds until softened.
  8. Place rice paper on a flat surface/cutting board and add a few tablespoons of riced cauliflower, shredded sweet potatoes, and shredded red cabbage.
  9. Roll up rice paper pretending it is a burrito.
  10. Serve with peanut or sweet thai chili sauce
