Steak Fajitas and More to Celebrate Cinco de Mayo
Get your sombreros and maracas out because it’s time to celebrate Cinco de Mayo!  
 
It’s the perfect opportunity to indulge in your favorite Mexican dishes and drinks, and have a good time with friends. If you’ll be hosting the party this year, the most important factor in being a good southern hostess is to have a lot of festive food to eat! 
 
Below we have a few of our favorite Cinco de Mayo dishes that won’t have you spending the whole night cooking, but spending time celebrating with friends instead. 
 
Ingredients
2/3 cup Moore's Original Marinade
2/3 cup beer
¼ cup fresh lime juice
Flank steak
Fresh Toppings of your choice
 
Instructions
1. Mix ingredients in which to marinate flank steaks for at least 30 minutes.
2. Remove from marinade and grill or broil until desired doneness.
3. Slice steak thinly across grain; roll in warmed flour tortillas with chopped tomatoes, guacamole and sour cream.
 
 
Ingredients
Moore's Crockpot Pulled Pork
1/2 cup Chicken Broth
1/2 cup Onion, diced
1 tsp. Ground Cumin
1 Tbsp. Fresh Cilantro
1 tsp. Chili Powder
2 10oz. Cans Enchilada Sauce
1 4oz. Can Diced Green Chilies
1 1/2 cups Shredded Cheddar Cheese
3/4 cup cojita cheese, crumbled
Flour tortillas
Fresh Toppings of your choice
 
Instructions
1. Preheat oven to 350 degrees.
2. Sauté' onion in 1/4 cup Chicken Broth until soft.  Remove from heat.
3. Add cumin, cilantro, chili powder, and green chilies to the onions.  Stir until combined.
4. Add 1 1/2 cans of Enchilada Sauce.  Stir.  Pour this mixture over the Pulled Pork and combine. 
5. On each flour tortilla, place some of the pork mixture and Cheddar Cheese.  Roll up the tortilla and place in a casserole dish sprayed with cooking spray.  Continue filling and rolling tortillas with remaining mixture.
6. Pour remaining Enchilada Sauce over the enchiladas and sprinkle first with any remaining Cheddar Cheese then sprinkle the crumbled Cojita Cheese on top.
7. Bake uncovered for 20 minutes and serve with desired toppings (i.e. sour cream, tomatoes, avocado, etc.)
 
Top it all off with an ice cold drink!
 
Ingredients
1 tsp salt
1 tsp Siracha
2 tbsp. lime juice
1 tsp Moore's Original Marinade
12 oz. chilled beer such a light lager
 
Instructions
1. Combine all ingredients in cocktail shaker, except beer.
2. Add ice and shake until well combined.
3. Poor beer over the top to fill.
