Greek Lemon Chicken Orzo Soup and More to Celebrate National Soup Month On a winter day in the South, there’s nothing better than coming home and sitting by the fireplace with the family. What makes that even better is having a warm bowl of soup in your hands to give you that warm-all-over feeling.

In celebration of National Soup Month we put together a few of our favorite soup and stew recipes to give your family a warm welcome home on a chilly day.

Greek Lemon Chicken Orzo Soup
Ingredients
4 oz. Moore's Original Marinade
¼ cup fresh lemon juice
2 cans Cream of Chicken soup
2 cups marinated chicken, cooked and shredded
2 tbsp. chicken soup base
2 quarts water
 
Instructions
  1. Marinate chicken for 30 minutes.
  2. Cook orzo, drain and rinse.
  3. Mix chicken soup base in 2 quarts water. Add chicken and lemon juice. Gently fold in orzo.
  4. Just before serving, add lemon juice. Heat through, but do not boil. Season to taste.
 
 
Savory Crockpot Beef Stew
Ingredients
2 pounds lean beef stew meat, cut in 1 inch cubes
¼ cup flour
½ tsp pepper
½ tsp salt
1 T Moore's Original Marinade
1 clove garlic
1 tsp paprika
1 bay leaf
1 ½ cups beef broth
1 onion, finely chopped
3 potatoes, diced
4 carrots, diced or one small bag of baby carrots
1 stalk celery, finely diced
 
Instructions
  1. Place meat in crockpot
  2. Combine flour, pepper, salt, and paprika
  3. Sprinkle over meat and stir to coat
  4. Add all other ingredients and stir to combine
  5. Cook on low for 10-12 hours or on high for 4-6 hours
 
 
Crockpot Beef and Vegetable Soup
Ingredients
1 lb Ground Beef
1 onion, finely chopped
1 clove garlic, minced
3 stalks celery, diced
1 bell pepper, diced
1 (28 oz.) can Italian stewed tomatoes, drained
1 (15 oz.) can mixed vegetables, drained
2 quarts beef broth
¼ cup Moore's Original Marinade
1 tsp paprika
Salt and pepper to taste
6 oz. of Cavatappi or Fisilli pasta (optional)
 
Instructions
  1. Begin to brown ground beef in skillet over medium heat
  2. When partially browned, add onions, celery, and bell pepper. Cook until vegetables are soft and meat is brown
  3. Add garlic and cook for 30 seconds (be careful not to burn or overcook)
  4. Drain
  5. Pour meat mixture into crockpot
  6. Mix all other ingredients (not pasta) in the crockpot
  7. Cook on low for 8 hours
 
Optional:
During the last 15 minutes of cooking add the pasta to the crockpot, stir to combine, and cook for remaining 15 minutes.
