Cheesy Potato Soup (and other favorite soup and stew recipes) Although we hate to say goodbye to summer and the warm weather, we love our comfort foods. With the weather getting cooler, and jackets coming out of the closet, it’s that time of year when we get to make our favorite feel-warm-all-over recipes.

This is the time when everyone needs great soup and stew recipes. So we’d like to share some of our favorites with you! Try serving any of these in a bread bowl, which everyone loves!

Moore’s Cheesy Potato Soup
Ingredients
    1 onion, diced
    1 T light olive oil
    2 T flour
    2 Pounds of white potatoes, peeled and cut in 1 inch cubes
    1 tsp paprika
    3 cups vegetable broth
    2 T Moore's Original Marinade
    4 cups shredded sharp cheddar cheese
    2 cups whole milk
    1 tsp salt
    ½ tsp pepper
 
Garnish as desired
    fresh scallions (green onions)
    bacon pieces
    extra cheese
    croutons
 
Instructions
  1. Heat oil in skillet over medium-high heat
  2. Cook onions in skillet until lightly browned (about 10-12 minutes)
  3. Add flour to skillet and cook for 1-2 minutes more
  4. Coat potatoes with paprika
  5. Add potatoes to skillet and cook for 1-2 minutes
  6. Add vegetable broth and Moore's Marinade to skillet and bring to a boil
  7. Reduce heat to medium low and continue to cook covered for 10-15 minutes or until potatoes are tender
  8. With a potato masher, coarsely mash potatoes
  9. Stir in milk and cheese
  10. Continue to mix for 2-3 minutes, until cheese is melted
  11. Remove from heat
  12. Add salt and pepper to taste
  13. Garnish with desired toppings
 
Savory Crockpot Beef Stew
Ingredients
    2 pounds lean beef stew meat, cut in 1 inch cubes
    ¼ cup flour
    ½ tsp pepper
    ½ tsp salt
    1 T Moore's Original Marinade
    1 clove garlic
    1 tsp paprika
    1 bay leaf
    1 ½ cups beef broth
    1 onion, finely chopped
    3 potatoes, diced
    4 carrots, diced or one small bag of baby carrots
    1 stalk celery, finely diced
 
Instructions
  1. Place meat in crockpot
  2. Combine flour, pepper, salt, and paprika
  3. Sprinkle over meat and stir to coat
  4. Add all other ingredients and stir to combine
  5. Cook on low for 10-12 hours or on high for 4-6 hours
 
Crockpot Beef and Vegetable Soup
Ingredients
    1 lb. Ground Beef
   1 onion, finely chopped
    1 clove garlic, minced
    3 stalks celery, diced
    1 bell pepper, diced
    1 (28 oz.) can Italian stewed tomatoes, drained
    1 (15 oz.) can mixed vegetables, drained
    2 quarts beef broth
    ¼ cup Moore's Original Marinade
    1 tsp paprika
    salt and pepper to taste
    6 oz. of Cavatappi or Fisilli pasta (optional)
 
Instructions
  1. Begin to brown ground beef in skillet over medium heat
  2. When partially browned, add onions, celery, and bell pepper. Cook until vegetables are soft and meat is brown
  3. Add garlic and cook for 30 seconds (be careful not to burn or overcook)
  4. Drain
  5. Pour meat mixture into crockpot
  6. Mix all other ingredients (not pasta) in the crockpot
  7. Cook on low for 8 hours
Optional: During the last 15 minutes of cooking add the pasta to the crockpot, stir to combine, and cook for remaining 15 minutes.
